There are all sorts of ears represented in goat ears. Pendulous, gopher, elf, erect, and even 'airplane' ears. There's nothing that's been done to the ears. No one stretched them or removed them. They're just different and it's how they're born.

Nubian dairy goats and some breeds of meat goats, have pendulous ears hanging long and low from the side of their heads. LaMancha goats famously have very small ears, which are either gopher or elf, depending on their length. Alpine, Nigerian Dwarf, Oberhasli, Saanen, Sable, and Toggenburg goats all have erect ears that stand up and face forward. Fainting goats, otherwise called Myotonic goats, have notable airplane ears carried horizontally out from their heads.
